Key Responsibilities:

  • Ensure product quality in the assigned station through tasting and monitoring of mise en place during production, following guidance from the Executive Chef / Executive Pastry Chef.
  • Supervise Pastry staff in an assigned service station during operational activities, ensuring compliance with production and storage requirements.
  • Control food consumption through portion and production control, adhering to Company recipes.
  • Implement batch cooking/preparation processes to minimize waste.
  • Meet cost targets in the Pastry galley, creating effective daily/shift production schedules for assigned sections.
  • Monitor ingredient consumption for daily production, plan orders accordingly, and keep the Executive Pastry Chef informed about production needs and order status.
  • Understand team role descriptions, communicate clear expectations based on each role, and provide timely feedback for improvement.

Skills, Knowledge & Expertise:

  • Formal qualification in pastry arts from a recognized culinary training institution.
  • Minimum of five years of experience in the pastry galley, with at least two years as Demi Chef de Partie Pastry in luxury hotels/resorts or cruise ships.
  • Well-versed in Public Health regulations with the ability to explain concepts.
  • Ability to supervise multicultural subordinate crew members.
  • Command of the English language, both verbal and written.
